Origin of Stratification in Creaming Emulsions.

چکیده
Colloidal suspensions aging under gravity have long been known to spontaneously separate into layers. We demonstrate through flow visualization experiments that a lateral temperature gradient as small as 10 mKycm can be responsible for such stratification and that strata correspond to a stack of convection rolls. A linear stability analysis suggests that the onset of stratification results from a convective instability peculiar to fluids with inhomogeneous mass densities subjected to lateral thermal gradients. Impact of weighting agents and sucrose on gravitational separation of beverage emulsions.
The influence of weighting agents and sucrose on gravitational separation in 1 wt % oil-in-water emulsions was studied by measuring changes in the intensity of backscattered light from the emulsions with height. Emulsions with different droplet densities were prepared by mixing weighting agents [brominated vegetable oil (BVO), ester gum (EG), damar gum (DG), or sucrose acetate isobutyrate (SAIB...
متن کاملEffects of propylene glycol alginate and sucrose esters on the physicochemical properties of modified starch-stabilized beverage emulsions.
This study was conducted to investigate the effect of main emulsion components namely, modified starch, propylene glycol alginate (PGA), sucrose laurate and sucrose stearate on creaming index, cloudiness, average droplet size and conductivity of soursop beverage emulsions. Generally, the use of different emulsifiers or a mixture of emulsifiers has a significant (p < 0.05) effect on the response...
متن کاملPhysicochemical and Emulsifying Properties of Barijeh (Ferula gumosa) Gum
Ferula gumosa Boiss is one of the natural plants of Iran whose exudates (Barijeh) can be used in food industry. In the present study the properties of the gum extracted from tubers of Ferula gumosa were examined. For this purpose, gum was extracted from crude exudates by alcoholic extraction with 90% (v/v) ethanol. The purity of gum was relatively high, and it was composed mostly ...
متن کاملEffects of protein concentration and oil-phase volume fraction on the stability and rheology of menhaden oil-in-water emulsions stabilized by whey protein isolate with xanthan gum
The influences of protein concentration (0.2, 1, 2wt%) and oil-phase volume fraction (5%, 20%, 40% v/v) on emulsion stability and rheological properties were investigated in whey protein isolate (WPI)-stabilized oil-in-water emulsions containing 0.2wt% xanthan gum (XG). The data of droplet size, surface charge, creaming index, oxidative stability, and emulsion rheology were obtained. The result...
متن کاملEffect of xanthan gum on physicochemical properties of whey protein isolate stabilized oil-in-water emulsions
The effect of xanthan gum (XG) addition on physicochemical properties of 2wt% whey protein isolate (WPI) stabilized oil-in-water (O/W) emulsions containing 20% v/v menhaden oil was investigated by measuring droplet size, viscosity, microstructure, creaming profile and oxidative stability. In fresh emulsions, addition of XG at different concentrations did not show any significant effect on the s...
